Don't feel like cooking? Chicken Burgers!

It sounds strange to say but even I have times when I don't feel like cooking. I usually keep a pound of ground chicken in my fridge so I can quickly make delicious chicken burgers (or chicken meatballs - same recipe but I use an ice cream scoop to form the meatballs) in about 20 minutes. This is also a great meal to make with your older children because you can allow them to choose the flavorings, stir and flip. I recommend using ground chicken instead of turkey because chicken has more flavor and is more moist.

To make the burgers, all that's needed is one pound of ground chicken, one egg and the seasonings of your choice: Italian, garlic, soy sauce, hot sauce, curry powder, etc. Let your imagination and taste buds go wild. Add fresh herbs, shredded vegetables, whatever you like to add flavor. Put all of these ingredients in a bowl, mix with a fork until fully mixed. I recomend you let the mixture sit for 5 minutes to allow the flavors to mingle. Scoop out with a large spoon into four portions and cook in (preferably cast iron) a saute pan for about 5 minutes per side. Voila! That's it! Add your favorite toppings, the bread of your choice and enjoy. I always serve with a salad. In 20 minutes, it's dinner!

Mise en place! A French term that means "to put in place". What does that mean? Get out and measure every ingredient, preheat oven, prepare equipment, read through recipe a few times - all before you begin cooking.

Use the best ingredients. Use local, organic, and heirloom/heritage varieties whenever possible. This will give you better flavor and better health. And you will be supporting your local farmers, producers and your local economy.

Be a label reader! Hidden sodium and sugar along with chemicals, preservatives, shelf stabilizers and GMO's are killing us - our bodies and our environment. If you can't pronouce it, don't eat it!
